Almond Encrusted Fish Fillet
Ingredients
- 4 white fish fillets
- 200 gms almonds
- 2 medium sized eggs
- 2 tbls cornflour
- Salt and pepper

Method
- Place almonds in blender and pulse until they are still a little chunky, then place on a large flat plate.
- Take fresh fish fillets and pat with paper towel to remove any excess moisture.
- Place cornflour, salt and pepper on a plate and lightly dust each fillet.
- Beat the eggs in a large bowl.
- Take each fish fillet and dip it into the egg mixture and then roll it in the almond mixture, ensuring it is coated all over.
- Place fish fillets onto a lined baking tray and bake in preheated oven at 220 °C until golden brown.
- Serve on a bed of quinoa and with your favourite salad.
