Anzac Biscuits

Ingredients

  • 125 gms plain white flour
  • 150 gms granulated sugar
  • 2 cups rolled oats, or 1 cup rolled oats and 1 cup dried coconut
  • 100 gms butter
  • 1 tbl golden syrup
  • ½ tsp bicarbonate soda
  • 2 tbls boiling water

Method

  • Put the flour, sugar and rolled oats and coconut, if using, into a bowl and mix well.
  • Melt the butter and golden syrup.
  • Dissolve the bicarbonate of soda in the boiling water and add to the melted butter and golden syrup.
  • Make a well in the centre of the flour and stir in the liquid and combine.
  • Place spoonfuls 4 cm apart on greased baking trays and cook in a preheated oven at 180ºC for 15 minutes.
This recipe came from my husbands New Zealand Edmonds Cookbook which he has had since he left home many years ago.
