Anzac Biscuits
Ingredients
- 125 gms plain white flour
- 150 gms granulated sugar
- 2 cups rolled oats, or 1 cup rolled oats and 1 cup dried coconut
- 100 gms butter
- 1 tbl golden syrup
- ½ tsp bicarbonate soda
- 2 tbls boiling water
Method
- Put the flour, sugar and rolled oats and coconut, if using, into a bowl and mix well.
- Melt the butter and golden syrup.
- Dissolve the bicarbonate of soda in the boiling water and add to the melted butter and golden syrup.
- Make a well in the centre of the flour and stir in the liquid and combine.
- Place spoonfuls 4 cm apart on greased baking trays and cook in a preheated oven at 180ºC for 15 minutes.
