Baked Winter Fruit

Ingredients

  • 2 large Pink Lady apples
  • 2 pears, just ripe
  • 12-18 dried moist figs
  • 24 dried moist apricots
  • 1 orange, zest and juice
  • Zest of 1 lime
  • 100 mls apple juice
  • 1 small piece of ginger, finely grated
  • Pinch of ground cinnamon
  • 25 gms flaked almonds, toasted and Greek yoghurt for serving

Method

  • Cut the unpeeled apples and pears into quarters and remove the cores and place into a large shallow ovenproof dish.
  • Add the figs and apricots to the apples and pears.
  • Remove the orange and lime peel with a zester and sprinkle over the fruit.
  • Squeeze the orange juice into a jug and add the apple juice, ginger and cinnamon, then pour over the fruit.
  • Cover with foil and place in the preheated oven at 180ºC for 1 hour.
  • Put the flaked almonds onto a baking tray and cook until golden brown, then set aside to cool.
  • Serve in bowls and garnish with toasted almonds and Greek yoghurt.
