Baked Winter Fruit
Ingredients
- 2 large Pink Lady apples
- 2 pears, just ripe
- 12-18 dried moist figs
- 24 dried moist apricots
- 1 orange, zest and juice
- Zest of 1 lime
- 100 mls apple juice
- 1 small piece of ginger, finely grated
- Pinch of ground cinnamon
- 25 gms flaked almonds, toasted and Greek yoghurt for serving
- Servings : 6 people
- Prep Time : 25 mins
- Cooking Time : 1 hour
- Temperature : 180ºC

Method
- Cut the unpeeled apples and pears into quarters and remove the cores and place into a large shallow ovenproof dish.
- Add the figs and apricots to the apples and pears.
- Remove the orange and lime peel with a zester and sprinkle over the fruit.
- Squeeze the orange juice into a jug and add the apple juice, ginger and cinnamon, then pour over the fruit.
- Cover with foil and place in the preheated oven at 180ºC for 1 hour.
- Put the flaked almonds onto a baking tray and cook until golden brown, then set aside to cool.
- Serve in bowls and garnish with toasted almonds and Greek yoghurt.
My sister Sue, used to make this a lot when I lived in the UK and I now make it to remind me of her!
