Ingredients

  • 195 gms plain flour
  • 2 tsp baking powder
  • 150 gms caster sugar
  • 1 tsp vanilla essence
  • 125 gms butter, softened
  • 1 cup frozen mixed berries or raspberries
  • Cream or custard to serve

Method

  • Mix all of the ingredients together, except for the berries.
  • Press three quarters of the mixture into the base of a 20 cm round cake tin or a long slice tin.
  • Sprinkle the frozen berries over the top.
  • Crumble the remaining mixture over the berries (some of the berries will still be visible).
  • Place into a preheated oven at 180ºC and cook for 35 minutes.
  • Serve hot or cold with custard or cream.
My lovely friend Michelle gave me this recipe many years ago and I never got around to making it until last week and have made two in the same week as we had friends over for dinner and it is the easiest and tastiest slice around.
