Cheese Straws
Ingredients
- 85 gms grated cheddar cheese (adding some parmesan gives a stronger flavour)
- 55 gms plain flour
- 1 tsp baking powder
- 1 tsp cayenne pepper
- 55 gms cold butter
- 1 egg yolk
- 1 tbl cold water
Method
- Mix cheese, flour, baking powder and cayenne pepper together.
- Cut butter into tiny pieces and squash into the flour and cheese mixture. Do not rub in.
- Beat egg yolk and water together and mix into the flour and cheese mixture with a butter knife until combined.
- Press into a 10 x 5 cm rectangle and cool in the fridge for 10 minutes.
- Keeping it rectangular, roll out to about 5 mm thick and cut into 32 cheese straws.
- Cook for 12 minutes, then check to see if they are golden brown.
- They are best cooked from frozen on a greased baking tray.
Mum's famous cheese straws which John tells me I still haven't quite mastered, and although they are good, they are not as good as mum's!

These cheese straws are to die for, very moreish. I never thought this recipe would be divulged. I will be cooking these for sure. Great snack to serve as a nibble for guests.
