Chinese Cabbage and Noodle Salad
Ingredients
- Half a Chinese cabbage, finely shredded
- 4 celery stalks, finely chopped
- 8 spring onions, finely chopped
- Packet of fried noodles
- 100 gms toasted almond slivers
- 100 gms toasted sunflower seeds
- Dressing
- 3 tbls brown sugar
- 1 tbl soy sauce
- ¼ cup olive oil
- ¼ cup white wine vinegar
- 1 tbl sesame oil
Method
- Combine the Chinese cabbage, celery and spring onions in a bowl.
- Toast the almond slivers and sunflower seeds in a large frying pan until golden brown and set aside.
- Combine the brown sugar, soy sauce, olive oil, white wine vinegar and sesame oil in a bowl and whisk together.
- Pour onto the salad and mix thoroughly.
- Add the noodles, sunflower kernels and almonds just before serving
Soon after I came to Australia our friend Jenny made this salad. Since then I have tasted many variations by other friends and I have also made my variation to Jenny's original recipe. It never fails to go down well at a BBQ.
