Chocolate Brazil Nut Biscuits
Ingredients
- 125 gms butter, softened
- 225 gms light soft brown sugar
- 1 tsp vanilla extract
- 1 medium egg
- 25 gms cocoa powder
- ¾ tsp ground cinnamon
- 175 gms plain flour
- ½ tsp bicarbonate of soda
- 200 gms white, milk or dark chocolate chopped into big chunks
- 150 gms brazil nuts, cut into quarters
Method
- Put the butter, sugar and vanilla extract in a bowl and beat until smooth.
- Beat in the egg, then stir in the cocoa powder and ground cinnamon.
- Add the flour and bicarbonate of soda and work until combined, then mix in the chocolate and brazil nuts. It is easier to use your hands to scrunch up the dough and get the mixture even.
- Pinch off nuggets of dough the size of a ping pong ball and roll between your palms until smooth.
- Cover a baking tray with non stick paper and place cookies on it, about 3-4 cm apart.
- Bake in a preheated oven at 180ºC for 12-15 minutes.
- Leave to cool on the tray for a few minutes, then transfer to a rack.
Last time mum came to visit she brought this recipe with her and lets just say John was happy for her to stay as long as she wanted once he had tried them.
