Chocolate Cake with Chilli, Salt and Tequila
Ingredients
- 200 gms dark chocolate (70% cocoa solids)
- 200 gms butter
- 2 tsp dried chilli flakes
- 4 eggs
- 150 gms caster sugar
- 3 tbls ground almonds
- 1 tbl plain flour
- 2 tbls tequila, plus extra for serving
- Salt flakes
- Strawberries
Method
- Melt the chocolate, butter and chilli flakes in a bowl over a simmering pan of boiling water.
- Put the chocolate mixture into a large bowl and allow to cool for a couple of minutes.
- Beat the eggs and stir into the chocolate mixture bit by bit until they are all combined.
- Stir in the sugar, followed by the ground almonds, flour, pinch of salt and tequila.
- Pour into a 20 cm lined cake tin and sprinkle over a generous amount of salt flakes.
- Bake in a preheated oven at 180ºC for 20 minutes.
- Allow to cool and just before serving drizzle with a little tequila and decorate with strawberries.
Our good friend Karen passed this recipe to us ages ago as a friend had baked it for her and she loved it, and thought that we would enjoy it too. Even for those who are not keen on Chilli, I am pretty sure they will love it too.
