Chocolate Mint Slice
Ingredients
- 250 gms chocolate ripple biscuits, crushed
- 300 gms Nestle condensed milk
- 50 gms butter
- 220 gms peppermint chocolate, chopped up
Method
- Line a square cake tin, leaving the paper hanging over the edges.
- Place the biscuits into the food processor and pulse into crumbs.
- Melt the butter and mix with the condensed milk.
- Cut each square of chocolate into four pieces and add to the crushed biscuits.
- Stir in the condensed milk and butter and pour the mixture into the lined cake tin.
- Sprinkle with hundreds and thousands and put into the freezer for 2 hours.
- Turn the mint slice out onto a cutting board, cut into small squares and put into a plastic container, separating each layer with greaseproof paper and return to the freezer.
- Serve straight from the freezer.
This recipe was given to me by our lovely friend Michelle. She always used to bring some over when she came to our house. The original recipe had coconut on top instead of the hundreds of thousands, but not being a lover of coconut I have changed it to hundreds of thousands.
