Chocolate Suprise Cup Cakes

Ingredients

  • 150 gms flour
  • 2 tsp baking powder
  • ½ tsp salt
  • 20 gms cocoa powder
  • 150 gms caster sugar
  • 150 gms chocolate chips
  • 1 tsp vanilla extract
  • 250 gms cauliflower
  • ½ cup milk
  • 3 tbls grapeseed oil
  • Topping
  • 100 gms peanut butter
  • 8 tsp maple syrup
  • 2 tbls cocoa powder
  • 1 tsp vanilla extract
  • 4 tbls icing sugar
  • 1 tbl milk

Method

  • Place all of the dry ingredients into a large bowl and mix well.
  • Put the cauliflower, vanilla extract, milk and oil into a food processor and blend until smooth.
  • Mix the cauliflower mixture into the dry ingredients.
  • Put into cup cake cases and place in a preheated oven at 170ºC and cook for 24 minutes.
  • To make the icing place all of the ingredients into a bowl and blend using a stick blender until nice and smooth. You may need to add more icing sugar to thicken it up.
  • Using a piping bag, pipe the mixture onto the cakes.
I found this recipe on Chocolate Covered Katie's blog as I was looking for a recipe for a cake that had a secret ingredient, and what better secret ingredient that cauliflower.
