Chocolate Suprise Cup Cakes
Ingredients
- 150 gms flour
- 2 tsp baking powder
- ½ tsp salt
- 20 gms cocoa powder
- 150 gms caster sugar
- 150 gms chocolate chips
- 1 tsp vanilla extract
- 250 gms cauliflower
- ½ cup milk
- 3 tbls grapeseed oil
- Topping
- 100 gms peanut butter
- 8 tsp maple syrup
- 2 tbls cocoa powder
- 1 tsp vanilla extract
- 4 tbls icing sugar
- 1 tbl milk
Method
- Place all of the dry ingredients into a large bowl and mix well.
- Put the cauliflower, vanilla extract, milk and oil into a food processor and blend until smooth.
- Mix the cauliflower mixture into the dry ingredients.
- Put into cup cake cases and place in a preheated oven at 170ºC and cook for 24 minutes.
- To make the icing place all of the ingredients into a bowl and blend using a stick blender until nice and smooth. You may need to add more icing sugar to thicken it up.
- Using a piping bag, pipe the mixture onto the cakes.
