Cornish Fairings
Ingredients
- 115 gms plain flour
- 1 tsp baking powder
- ½ tsp salt
- 1 tsp bicorbonate soda
- 1 tsp ground ginger
- 1 tsp mixed spice
- 1 tsp cinnamon
- 55 gms butter, cut into tiny pieces
- 55 gms granulated sugar
- 2 tbls golden syrup
Method
- Mix all of the dry ingredients together (except the sugar).
- Rub in the butter.
- Add the sugar.
- Heat the golden syrup until it runs easily and mix into the other ingredients.
- Roll into balls the size of a walnut and place well apart on a greased baking tray.
- Place on the top shelf of a preheated oven at 160ºC for 5 minutes, and then remove and let them sit on the bench for 1 minute (this allows them to crack). Return them to the bottom shelf of the oven for 5 minutes.
Mum always made these when we were growing up and I love making them now as they are small and satisfy my sweet cravings.
