Cornish Fairings

Ingredients

  • 115 gms plain flour
  • 1 tsp baking powder
  • ½ tsp salt
  • 1 tsp bicorbonate soda
  • 1 tsp ground ginger
  • 1 tsp mixed spice
  • 1 tsp cinnamon
  • 55 gms butter, cut into tiny pieces
  • 55 gms granulated sugar
  • 2 tbls golden syrup

Method

  • Mix all of the dry ingredients together (except the sugar).
  • Rub in the butter.
  • Add the sugar.
  • Heat the golden syrup until it runs easily and mix into the other ingredients.
  • Roll into balls the size of a walnut and place well apart on a greased baking tray.
  • Place on the top shelf of a preheated oven at 160ºC for 5 minutes, and then remove and let them sit on the bench for 1 minute (this allows them to crack). Return them to the bottom shelf of the oven for 5 minutes.
Mum always made these when we were growing up and I love making them now as they are small and satisfy my sweet cravings.
