Cranberry and Pecan Oat Biscuits
Ingredients
- 140 gms butter
- 175 gms flour
- 2 tsp baking powder
- 150 gms dried cranberries
- 85 gms porridge oats
- 175 gms light brown sugar
- 1 tsp ground mixed spice
- 50 gms pecans, roughly chopped
- 1 egg, beaten
Method
- Put the butter, flour and baking powder into a large bowl and rub the butter into the flour until it resembles breadcrumbs.
- Stir in the cranberries, porridge oats, sugar, spice and pecans until well combined.
- Make a well in the centre and add the beaten egg and bring together using a round bladed butter knife to make a firm dough.
- Roll the dough into 24 even sized balls and place well apart on lined baking trays.
- Place in a preheated oven at 180ºC and bake for 15 minutes until golden brown.
- If you don't want to cook all of them at once, roll the remaining mixture into a log, wrap it in clingfilm and freeze until you want to bake them. When you go to bake them, let the mixture defrost and then roll into balls.
When I was home in the UK I found this recipe in Waitrose and decided to bring it back with me and try them out. They are delicious and are now on mum's baking list too!
