Cup Cakes
Ingredients
- 90 gms butter
- ½ tsp vanilla extract
- 110 gms caster sugar
- 2 eggs
- 150 gms flour
- 2 tsp baking powder
- 2 tbls milk
- Icing
- 125 gms soft butter
- 240 gms icing sugar, sifted
- 1 tbl milk
- 1 tsp lemon juice
Method
- Cream the butter, vanilla extract and sugar togehter, beat in the eggs and then fold in the flour, baking powder and milk.
- Once combined, continue to beat on a medium setting until the mixture is a pale colour.
- Divide mixture among the cases and bake in a preheated oven at 160ºC for 18 minutes.
- To make the icing, beat the butter until soft, add in half of the icing sugar, lemon and combine.
- Add the milk and remaining icing sugar and beat until light and fluffy.
- Once the cakes are cool, decorate and sprinkle with hundreds and thousands, nuts, chocolate or anything else you have.
