Fish Bake
Ingredients
- 200 mls milk
- 350 gms prawns
- 550 gms cod
- 25 gms butter
- 25 gms flour
- 300 mls milk
- 150 mls single cream
- 16 cream crackers
- Butter
- 1 bunch of continental parsley, finely chopped
- Grated cheddar cheese
- Salt and pepper
- Servings : 8

Method
- Heat the milk in a non stick frying pan, add the fish and prawns and cook until fish is cooked through (approx 10 minutes). You will need to take the prawns out after about 4 minutes.
- Once the fish has cooled, remove any bones, flake the fish and roughly chop the prawns.
- Melt the butter in a large pan, gradually add the flour stirring all the time. Then stir in the milk and cook until thick. Season well with salt and pepper.
- Stir the prawns, fish and cream into the sauce, then put into a large shallow baking dish.
- Butter the cream crackers liberally. Place in a plastic bag in the freezer until the butter is quite hard.
- Using a rolling pin break them up into pea sized pieces.
- Mix with the parsley and cheese and sprinkle over the top of the fish.
- Bake in a preheated oven at 180ºC for 25 minutes and serve with fresh garden peas.
My Grandma always called this comfort food and she was right! It also goes down great if you have friends over for dinner!
