Fish with Parmesan Topping

Ingredients

  • 110 gms fresh white bread, broken into pieces
  • 50 gms freshly grated parmesan
  • Fresh coriander, finely chopped
  • 1 clove garlic, crushed
  • Finely grated rind of 1 lemon
  • 50 gms butter, melted
  • 4 fillets blue eye

Method

  • Place the bread, coriander and garlic into the food processor and process until finely chopped.
  • Tip into a bowl and add the parmesan and lemon rind. Stir in the melted butter and season with salt and pepper.
  • Place fish on a greased shallow baking tray.
  • Divide the topping between the pieces of fish and gently press onto the fillets.
  • Place into a preheated oven at 200ºC for 15-20 minutes or until the topping is lightly browned and fish begins to flake.
  • Serve with our Pear and Rocket Salad. Delicious!
This is one of my own recipes. I have cooked it for so many dinner parties I have lost count of who I have made it for. Its always a favourite.
