Fish with Parmesan Topping
Ingredients
- 110 gms fresh white bread, broken into pieces
- 50 gms freshly grated parmesan
- Fresh coriander, finely chopped
- 1 clove garlic, crushed
- Finely grated rind of 1 lemon
- 50 gms butter, melted
- 4 fillets blue eye
- Servings : 4

Method
- Place the bread, coriander and garlic into the food processor and process until finely chopped.
- Tip into a bowl and add the parmesan and lemon rind. Stir in the melted butter and season with salt and pepper.
- Place fish on a greased shallow baking tray.
- Divide the topping between the pieces of fish and gently press onto the fillets.
- Place into a preheated oven at 200ºC for 15-20 minutes or until the topping is lightly browned and fish begins to flake.
- Serve with our Pear and Rocket Salad. Delicious!
This is one of my own recipes. I have cooked it for so many dinner parties I have lost count of who I have made it for. Its always a favourite.
