Flap Jack Stack Pancakes

Ingredients

  • 1½ cups plain flour
  • ½ cup oats
  • 3 eggs
  • ½ cup milk
  • 30 gms melted butter
  • Fresh Fruit
  • Lemon juice
  • Maple syrup

Method

  • Place flour, oats, eggs and milk into mixing bowl and mix together.
  • Mix in melted butter.
  • Tip - if you have time and are prepared, set aside until morning.
  • If you have left the mixture overnight, add approximately a third of a cup of water to the mixture and stir to desired consistency.
  • Heat non-stick pan on high and add butter.
  • Pour 1/3 of a cup of mixture into the frying pan and cook on one side for about 1 minute and then flip it over to cook the other side.
  • Serve with your choice of fresh fruit, cherries in syrup, 100% maple syrup, natural yoghurt or lemon and sugar or cottage cheese and sultanas .............
