Fresh Fruit Brûlée
Ingredients
- 1 punnet strawberries, quartered
- 115 gms white seedless grapes, halved
- 1 punnet blueberries
- 12 amaretti biscuits (small almond flavoured biscuits)
- 200 mls crème fraîche
- 170 gms soft brown sugar
Method
- Divide the fruit into 4 ramekin dishes.
- Put three amaretti biscuits on top of each ramekin.
- Spoon over the crème fraîche to completely seal the fruit and biscuits in and chill for at least 1 hour.
- Just before serving, sprinkle over the sugar and place under a preheated hot grill for 1-2 minutes until the sugar has caramalised.
I made this recipe up when I was living in the UK and commuting into London every day. It was the perfect dessert to make when I had people over for dinner during the week as it is so quick and easy and tastes like you have spent spent hours making it!

I made these the other night and was unable to get the amaretti biscuits, so used some orange roasted almonds I found in the local shops instead and it was delicious. I put the crème fraîche on at the last minute so as not to make the nuts go too soggy and they worked beautifully.
