Fried Halloumi Cheese with Capers and Lime

Ingredients

  • 1 halloumi cheese
  • 2 tbls well seasoned flour
  • 2 tbls olive oil
  • Dressing
  • 1 tbl capers, drained
  • 1 tbl white wine vinegar
  • 1 clove garlic, crushed
  • 1 tsp grain mustard
  • 1 tbl chopped fresh coriander leaves
  • 2 tbls extra virgin olive oil
  • Juice and zest of 1 lime
  • Salt and freshly ground pepper
  • Coriander to garnish

Method

  • Unwrap the cheese and pat dry with kitchen paper and slice into 8 pieces.
  • Place all of the ingredients for the dressing into a jar and shake well.
  • Heat the oil in the frying pan over a medium heat and when it is really hot press the halloumi into the flour to coat on both sides and add them to the pan and cook for 1 minute on each side.
  • Place onto a large platter and drizzle with the dressing and sprinkle with some fresh coriander and serve immediately.
Many years ago when I was still living in the UK my friend June cooked this when I went over for dinner. I think it is one of the tastiest halloumi recipes I have ever had.
