Fried Halloumi Cheese with Capers and Lime
Ingredients
- 1 halloumi cheese
- 2 tbls well seasoned flour
- 2 tbls olive oil
- Dressing
- 1 tbl capers, drained
- 1 tbl white wine vinegar
- 1 clove garlic, crushed
- 1 tsp grain mustard
- 1 tbl chopped fresh coriander leaves
- 2 tbls extra virgin olive oil
- Juice and zest of 1 lime
- Salt and freshly ground pepper
- Coriander to garnish
Method
- Unwrap the cheese and pat dry with kitchen paper and slice into 8 pieces.
- Place all of the ingredients for the dressing into a jar and shake well.
- Heat the oil in the frying pan over a medium heat and when it is really hot press the halloumi into the flour to coat on both sides and add them to the pan and cook for 1 minute on each side.
- Place onto a large platter and drizzle with the dressing and sprinkle with some fresh coriander and serve immediately.
Many years ago when I was still living in the UK my friend June cooked this when I went over for dinner. I think it is one of the tastiest halloumi recipes I have ever had.
