Glühwein
Ingredients
- 4 ltrs red wine
- 6-8 cinnamon sticks
- 10 whole allspice
- 2 unpeeled oranges
- 2 cups of orange juice
- 1 cup sherry or port
- 10 whole cloves
- 2 cups caster sugar (may need more depending on quality of red wine)
Method
- Pour the red wine into a large pot and heat it on a very low heat, ensuring it doesn't boil.
- Break the cinnamon sticks in half and put them into the wine with the whole allspice.
- Cut the oranges into thick slices and stud with the cloves and add to the red wine.
- Add the sherry / port and orange juice and then stir in the sugar.
- Stir on and off for about 30 minutes to give the spices time to infuse with the wine and then taste. You may need to add some more sugar at this point. The cheaper the wine the more sugar may be required. You could need up to another 3 cups of sugar!
- Let it simmer for another 30 minutes being careful not to let it boil.
My husband, John, found this recipe and has been desperate to make it since he was in Germany last November and had a few glasses at the Christmas markets.
