Lamb Chops and Sweet Potatoe
Ingredients
- 1 tbl olive oil
- Salt and Pepper
- 8 lamb chump chops, fat trimmed
- 2 red onions, thinely sliced
- 2 cm fresh ginger, grated
- 4 cloves of garlic, peeled and thinly sliced
- 1 tsp ground cinnamon
- 1 tsp ground coriander
- 1 tsp cumin
- 1 tsp tumeric
- 5 tomatoes, diced
- 800 gms sweet potatoes, peeled and cut into large chunks
- 2 tbls lemon juice
- 1 tbl soy sauce
- 1 tbl honey
- 1 cinnamon stick
- 400 mL boiling water
- Chopped corriander to serve
- Servings : 4 people

Method
- Heat the olive oil in a large non stick casserole dish.
- Season the chops with salt and pepper, brown on both sides and set aside.
- Add the onions to the pan and cook for about 5 minutes. Then add the ginger, garlic, cinnamon, coriander, cumin and tumeric and cook for a couple of minutes until fragrant.
- Add the tomatoes, season with salt and pepper and cook for a further 5 minutes.
- Add the browned chops, sweet potatoes, lemon juice, soy sauce, honey and cinnamon stick. Pour over 400 mL water. Cover with a lid and put into a preheated oven at 180ºC for 2 hours.
- Serve with fresh peas and coriander.
Dad sent me this recipe a few months ago (in his winter) and now that the colder weather is definitely here i decided to give it a go and it was a huge hit.
