Lamb Chops and Sweet Potatoe

Ingredients

  • 1 tbl olive oil
  • Salt and Pepper
  • 8 lamb chump chops, fat trimmed
  • 2 red onions, thinely sliced
  • 2 cm fresh ginger, grated
  • 4 cloves of garlic, peeled and thinly sliced
  • 1 tsp ground cinnamon
  • 1 tsp ground coriander
  • 1 tsp cumin
  • 1 tsp tumeric
  • 5 tomatoes, diced
  • 800 gms sweet potatoes, peeled and cut into large chunks
  • 2 tbls lemon juice
  • 1 tbl soy sauce
  • 1 tbl honey
  • 1 cinnamon stick
  • 400 mL boiling water
  • Chopped corriander to serve

Method

  • Heat the olive oil in a large non stick casserole dish.
  • Season the chops with salt and pepper, brown on both sides and set aside.
  • Add the onions to the pan and cook for about 5 minutes. Then add the ginger, garlic, cinnamon, coriander, cumin and tumeric and cook for a couple of minutes until fragrant.
  • Add the tomatoes, season with salt and pepper and cook for a further 5 minutes.
  • Add the browned chops, sweet potatoes, lemon juice, soy sauce, honey and cinnamon stick. Pour over 400 mL water. Cover with a lid and put into a preheated oven at 180ºC for 2 hours.
  • Serve with fresh peas and coriander.
Dad sent me this recipe a few months ago (in his winter) and now that the colder weather is definitely here i decided to give it a go and it was a huge hit.
