Millionaires Shortbread
Ingredients
- Shortbread
- 115 gms butter
- 55 gms caster sugar
- 115 gms plain flour
- Fudge
- 115 gms butter
- 115 gms caster sugar
- 55 gms golden syrup
- 395 gm tin condensed milk
- 350 gms milk chocolate
Method
- Cream the butter and sugar and then stir in the flour.
- Spread evenly over the base of a lined 27 x 17 cm swiss roll tin. Leave the greaseproof paper hanging over the edge of the tin to make it easier to remove and cut.
- Bake in a preheated oven at 180°C for 15-20 minutes, until just starting to turn golden brown. Set aside to cool.
- Melt butter, sugar, golden syrup and Nestles milk in a pan and bring to the boil.
- Simmer for about 5 minutes, ensuring you stir constantly so it doesn’t burn.
- Pour over the base and allow to cool.
- Melt the chocolate in a bowl over a pan of boiling water and pour over the top of the cooled caramel.
- Once thoroughly cool remove from the tin and cut into 2 cm squares.
My Grandma used to make this whenever we visited, the only difference being her pieces were a lot larger than mine!!!

Hi Rach,
I would call this, caramel slice, shortbread has corn flour in it.

This is what we were bought up with it being called. It may be an English thing!
