Mint Slice
Ingredients
- 1 packet chocolate ripple biscuits
- 125 gms XXX strong mints
- 200 gms condensed milk
- 80 gms butter
- 220 gms milk chocolate (cooking works best)
Method
- Melt the butter and then stir in the condensed milk until combined and leave to cool.
- Crush biscuits into a powder
- Crush mints to small chunks. Sieve them once crushed to separate the chunks from the powder and throw the powder away if you don't want it to be too minty.
- Mix dry ingredients together and then stir in the butter and condensed milk until well combined.
- Line a square baking tin with baking paper and press the mixture in until flat. Put into the fridge to set (approx 10 minutes).
- Melt the chocolate and pour over chocolate base. Put back into the fridge to set.
- Once set, remove from fridge and leave out so the topping softens enough to cut into small 2 x 2 cm squares. If the chocolate on top is cracking when you cut it, it needs more time to soften as it will cut perfectly…though the cracked ones cannot be served and must be eaten by the cook!
John loves this so much he made me get the recipe. Mine is definitely not as good as Leah’s so I normally leave it to the expert to make!
