Nutty Muesli

Ingredients

  • 3 cups rolled oats
  • 2 cups almonds, cashews and pistachios
  • 2 tbls chia seeds
  • 1 cup coconut flakes
  • 1 tsp ground cinnamon
  • 100 gms coconut oil or butter, melted
  • 3 tbls rice syrup

Method

  • Line 2 baking trays with greaseproof paper.
  • Put all of the ingredients into a bowl and mix well.
  • Spread the mixture out evenly over both baking trays.
  • Place into a preheated oven at 120ºC and cook for 10 minutes and then turn it over and cook for a further 10 minutes.
  • Once it is cooled you can add dried fruit (if you want) and then put it into an airtight container.
Every time I go over to see Michelle she sends me home with a bag of homemade muesli which I love. I am not a coconut fan, but I even make it with the coconut in it too!
