Nutty Muesli
Ingredients
- 3 cups rolled oats
- 2 cups almonds, cashews and pistachios
- 2 tbls chia seeds
- 1 cup coconut flakes
- 1 tsp ground cinnamon
- 100 gms coconut oil or butter, melted
- 3 tbls rice syrup
Method
- Line 2 baking trays with greaseproof paper.
- Put all of the ingredients into a bowl and mix well.
- Spread the mixture out evenly over both baking trays.
- Place into a preheated oven at 120ºC and cook for 10 minutes and then turn it over and cook for a further 10 minutes.
- Once it is cooled you can add dried fruit (if you want) and then put it into an airtight container.
Every time I go over to see Michelle she sends me home with a bag of homemade muesli which I love. I am not a coconut fan, but I even make it with the coconut in it too!
