Peanut Butter and Pumpkin Seed Biscuits
Ingredients
- 175 gms crunchy peanut butter
- 75 gms unsalted butter, melted
- 200 gms dark brown molasses sugar
- 2 medium sized eggs
- 2 tsp vanilla extract
- 100 gms pumpkin seeds, plus extra to finish
- 125 gms plain flour
- ½ tsp bicarbonate of soda
Method
- Beat the peanut butter, melted butter and muscovado sugar together until smooth.
- Add the eggs and vanilla extract and beat again.
- Stir in the pumpkin seeds, flour and bicarbonate of soda until smooth.
- Spoon onto a lined baking tray about 4-5 cm apart.
- Sprinkle each biscuit with some extra pumpkin seeds.
- Place into a preheated oven at 160ºC and bake for 10-12 minutes.
Mum sent this recipe to me a few weeks ago and I decided to give them a go as she had raved about them so much. I went to the supermarket 3 times to get the pumpkin seeds, but on the last trip I had it in my head that I needed sunflower seeds! When I went to make them I realised I had the wrong seeds, but decided to give them a go anyway and they were fantastic, even with sunflower rather than pumpkin seeds!
