Potato Bread
Ingredients
- 225 gms self-raising flour
- ½ tsp sea salt
- 170 gms unpeeled potatoes
- 55 gms parmesan cheese cut into small cubes
- 1 tbl chopped fresh sage
- 2 large eggs, lightly beaten
- 1 tbl milk
- Flour for dusting
- 30 gms parmesan shavings
- 1 tsp olive oil
- 8 large sage leaves
Method
- Sift the flour and salt into a large bowl.
- Coarsely grate the potatoes into the flour and toss around in the bowl.
- Add the cubes of parmesan and chopped sage.
- Lightly beat the eggs and milk together and mix into the flour using a palete knife.
- Once combined transfer to a greased baking tray and form it into a 15 cm round and dust with flour.
- Dip the sage leaves into the olive oil and decorate the loaf.
- Make a cross on the loaf with a blunt knife and sprinkle with parmesan shavings.
- Place in a preheated oven at 190ºC and cook for 45 minutes, until it is golden and crusty.
- Serve warm with hearty winter soup.
Mum's potato bread makes any bowl of soup extra special.
