Potato Nests With Salmon and Watercress
Ingredients
- 200 gms potatoes, grated
- 1 egg
- Sea salt and black pepper
- 30 gms butter, melted
- 250 mls sour cream
- 1 tbl dill, chopped
- 1 tbl lemon juice
- 100 gms watercress sprigs
- 5 slices smoked salmon
Method
- Finely grate the potatoes and squeeze any excess juice from them before placing into a large mixing bowl.
- Mix the potato, egg and salt and pepper together.
- Place a tablespoon of the potato mixture into two greased 12 hole 25 ml capacity mini muffin tins, and shape the mixture into the cases.
- Pour ¼ teaspoon of melted butter into each case and bake in a preheated oven at 200ºC for 20 minutes, or until golden brown. Leave to cool on a wire rack.
- Combine the sour cream, dill and lemon juice.
- Place a sprig of watercress into each nest and top with the sour cream mixture and smoked salmon.
I found this recipe in a magazine years ago and made them a couple of times. When I went to a cup day catch up in the park recently I dug the recipe back out and it was a huge hit. I think they will be on the Christmas nibbles menu this year.

I love these, they are great nibbles for parties and drinks in the evening with family and friends. I first had them when Rachel made them at christmas and our whole family agreed they were great.
