Prawn and Feta Filo Cigars
Ingredients
- 115 gms prawns, roughly chopped
- 225 gms good quality feta cheese, crumbled
- Small piece of root ginger, peeled and grated
- 1 tbl chopped chives
- Salt and pepper
- 1 tsp nutmeg
- Filo pastry
- Melted butter
Method
- Mix the prawns, feta, ginger, chives, salt, pepper and nutmeg together.
- Cut the filo sheets into 10 cm squares (you will need 50 squares).
- Brush a filo sheet with butter and place another filo sheet on top of it.
- Place a spoonful of filling onto it diagonally.
- Turn one corner up and over the filling, and then turn in the two opposite corners and roll into a cigar shape.
- Place on a buttered baking sheet and brush well with butter. Repeat until all the filo parcels have been filled.
- Place into a preheated oven at 200ºC for 10-15 minutes until the filo pastry is golden brown.
- You can make them ahead of time and freeze them. If you do this, freeze them before you butter them and then butter them when you take them out of the freezer to cook. They can then be cooked from frozen.
This recipe came from my mum who often makes these to go with drinks when all the family are around for dinner.
