Prawns With Lime and Ginger

Ingredients

  • 500 gms large prawns, tails on
  • 1 small piece of root ginger, finely chopped
  • ½ tsp ground ginger
  • ½ tsp ground coriander
  • ½ tsp tumeric
  • 2 small pieces of lemon grass, crushed and finely chopped
  • 2 red chillies, seeded and chopped
  • Several fresh chives, finely chopped
  • 10 basil leaves, finely chopped
  • 1 lime, juiced
  • Salt

Method

  • Place the prawns on a large sheet of greaseproof paper.
  • Place the rest of the ingredients into a large jar, shake well and pour over the prawns.
  • Fold the greaseproof paper into a parcel and secure with string.
  • Place into a preheated oven at 200ºC and bake for 7 minutes.
My amazing friend Una used to make these for us when she lived in Australia and now she is back in the UK I now make them to remind me of her.
