Prawns With Lime and Ginger
Ingredients
- 500 gms large prawns, tails on
- 1 small piece of root ginger, finely chopped
- ½ tsp ground ginger
- ½ tsp ground coriander
- ½ tsp tumeric
- 2 small pieces of lemon grass, crushed and finely chopped
- 2 red chillies, seeded and chopped
- Several fresh chives, finely chopped
- 10 basil leaves, finely chopped
- 1 lime, juiced
- Salt
Method
- Place the prawns on a large sheet of greaseproof paper.
- Place the rest of the ingredients into a large jar, shake well and pour over the prawns.
- Fold the greaseproof paper into a parcel and secure with string.
- Place into a preheated oven at 200ºC and bake for 7 minutes.
My amazing friend Una used to make these for us when she lived in Australia and now she is back in the UK I now make them to remind me of her.
