Ingredients

  • 8 sheets of rice paper
  • 16 large cooked prawns, sliced in half
  • 1 avocado, sliced
  • 1 carrot, julienned
  • 1 small cucumber, julienned
  • Handful of basil, chopped
  • Thai dipping sauce
  • Hoisin sauce

Method

  • Fill a large shallow dish with warm water.
  • Prepare your fillings and put into separate piles on a large plate.
  • Peel and devein the prawns and slice them in half.
  • Place one of the sheets of rice paper into the warm water for 15 seconds, remove and place on a large plate.
  • Put some carrot down the centre of the rice paper, leaving the bottom 3 cm empty, top with cucumber, prawns, avocado and basil.
  • Fold the bottom up towards the filling and then fold the right hand side into the centre and fold the left hand side over to make a tight parcel.
  • Repeat the process for the other rolls.
  • Serve with Thai dipping sauce and hoisin sauce in side dishes.
I went to a cooking class in Cambodia where I discovered how to make these. I had always struggled in the past and I found out that I was leaving my rice paper in the water too long!
