Rice Paper Rolls
Ingredients
- 8 sheets of rice paper
- 16 large cooked prawns, sliced in half
- 1 avocado, sliced
- 1 carrot, julienned
- 1 small cucumber, julienned
- Handful of basil, chopped
- Thai dipping sauce
- Hoisin sauce
Method
- Fill a large shallow dish with warm water.
- Prepare your fillings and put into separate piles on a large plate.
- Peel and devein the prawns and slice them in half.
- Place one of the sheets of rice paper into the warm water for 15 seconds, remove and place on a large plate.
- Put some carrot down the centre of the rice paper, leaving the bottom 3 cm empty, top with cucumber, prawns, avocado and basil.
- Fold the bottom up towards the filling and then fold the right hand side into the centre and fold the left hand side over to make a tight parcel.
- Repeat the process for the other rolls.
- Serve with Thai dipping sauce and hoisin sauce in side dishes.
I went to a cooking class in Cambodia where I discovered how to make these. I had always struggled in the past and I found out that I was leaving my rice paper in the water too long!
