Rum and Raisin Cookies
Ingredients
- ¼ cup dark rum
- 300 gms raisins
- 125 gms butter
- ½ tsp vanilla extract
- 30 gms cocoa powder
- 350 gms plain flour
- 1 tsp baking powder
- 1 egg
- ¼ cup milk
- ½ cup dark chocolate chunks
Method
- Place rum and raisins in a small saucepan over a low heat and simmer until the raisins have absorbed the rum.
- Combine the butter, sugar, vanilla, cocoa powder, flour, baking powder, egg and milk in the food processor until breadcrumbs appear.
- Add the chocolate and rum soaked raisins and stir to combine.
- Shape a large tablespoon of cookie mixture into a flat round and place onto a lined baking tray.
- Place into a preheated oven at 180ºC and cook for 12-15 minutes until the base is dark and crisp.
One of the girls in the office gave me the recipe for these biscuits and it has taken me over 10 years to get around to cooking them and they were well worth the wait!
