Salmon and Prosciutto

Ingredients

  • 12 slices prosciutto
  • 4 skinless salmon fillets
  • Freshly chopped chives
  • Lemon juice
  • 340 gms baby potatoes (washed and thickly sliced)
  • 225 gms spinach (washed)
  • 2 tbl seeded mustard
  • 1 tbl olive oil
  • Salt and pepper

Method

  • Line a baking tray with greaseproof paper and lay 3 slices of prosciutto on top, then sit a salmon fillet in the middle of them. Season with salt and pepper, sprinkle with chives and a squeeze of lemon juice.
  • Bring the prosciutto round the salmon and scrunch up on top to secure. Repeat for other 3 salmon fillets and bake in preheated oven at 200ºC for 15 minutes.
  • Meanwhile cook the potatoes in a pan of boiling salted water for 10 minutes or until tender.
  • Heat a large frying pan and throw in the spinach and cook until just wilted.
  • Stir in the mustard and oil and season with salt and pepper.
  • Drain the potatoes and toss with the spinach.
  • Put the salmon fillets on four serving plates and serve with the potatoes and spinach.

    Hi Rachel,

    Had your lovely salmon prosciutto recipe cooked for us when we recently had dinner with your dear mother and father and it was superb. Your mother also makes the best cheese straws ever, we adore them and sit nibbling them with a glass of wine, how good is that!! She also cooks lots of your lovely recipes which we enjoy.       Thank you for the lovely message. Mum is an amazing cook and I am still told by John my cheese straws as not as good. Hope to see you next time we are home.
