Salted Caramel Bark

Ingredients

  • ½ box original Salada crackers
  • 1 cup unsalted butter
  • 1 cup brown sugar (light or dark)
  • Big pinch of sea salt
  • ½ tsp pure vanilla extract
  • 1 large family block of dark chocolate, broken into pieces
  • 1 cup chopped almonds, pecans, walnuts or other nut of your choice (top with what you like!)
  • Extra sea salt flakes for sprinkling, optional

Method

  • Place the crackers onto an oven proof tray.
  • Melt the butter and brown sugar together and stir over a medium heat until it begins to boil.
  • Once boiling let it bubble for 3 minutes. Stir well as it will thicken as it cooks.
  • Remove from heat and add a BIG pinch of salt and the vanilla extract.
  • Quickly pour the caramel over the tray of unbroken crackers and spread quickly as it thickens and sets as soon as it cools.
  • Place the tray in preheated oven at 200ºC for 10-12 minutes, keeping an eye on the crackers so they don’t burn
  • Remove from the oven and cover with broken pieces of chocolate and let it stand for 5 minutes, then spread them across the caramel using a spatula.
  • Sprinkle the nuts and extra sea salt over the melted chocolate and leave to cool overnight.
  • Break by hand into pieces and store in an airtight container and it will last a week.
