San Choy Bau

Ingredients

  • 1 tbl peanut oil
  • 2 garlic cloves, crushed
  • 2 cm piece fresh ginger, finely grated
  • 500 gms lean pork mince
  • 2 tbls oyster sauce
  • 1 tbl soy sauce
  • 1 tsp sesame oil
  • 1 lime, juiced
  • 3 spring onions, finely sliced
  • 225 gms water chestnuts, roughly chopped
  • 1 large handful coriander leaves, chopped
  • 12 large cos lettuce leaves
  • 100 gms raw peanuts, roughly chopped

Method

  • Heat the peanut oil in a wok over a high, add the garlic, ginger and pork and stir for 2-3 minutes until the pork changes colour.
  • Combine the oyster sauce, soy sauce, sesame oil and lime juice in a bowl and add this together with the spring onions and water chestnuts to the pork mixture and fry for another 2 minutes.
  • Add half of the peanuts and the coriander to the pork mixture, then place a large spoonful into each of the lettuce leaves.
  • Sprinkle with peanuts and coriander and serve on a large platter.
We always go to Trevor and Kay's for dinner on Christmas night and Kay always comes up with something light and refreshing to eat. This year was no exception when Kay made San Choy Bau together with rice paper rolls.
