Smoked Salmon and bilinis
Ingredients
- ⅓ cup buckwheat flour
- ¼ cup plain flour
- 1 tsp baking powder
- 1 egg, lightly beaten
- ⅔ cup buttermilk
- 25 gms butter, melted
- Olive oil
- 2 tbls sour cream
- 350 gms smoked salmon
- 1 lemon
Method
- Sift the buckwheat flour, plain flour and baking powder into a bowl.
- Mix the egg and buttermilk and then whisk into the flour.
- Stir in the melted butter.
- Heat a large frying pan over a medium heat and spray with oil and add 1 large tablespoon of mixture per bilini.
- Cook the bilinis for 2 minutes on each side or until browned.
- Serve bilinis topped with smoked salmon and sour cream, with lemon wedges on the side.
Mum used to make these and I thought it was a great recipe to dig out to make heart shaped blinis for valentines day.
