Smoked Salmon and bilinis

Ingredients

  • ⅓ cup buckwheat flour
  • ¼ cup plain flour
  • 1 tsp baking powder
  • 1 egg, lightly beaten
  • ⅔ cup buttermilk
  • 25 gms butter, melted
  • Olive oil
  • 2 tbls sour cream
  • 350 gms smoked salmon
  • 1 lemon

Method

  • Sift the buckwheat flour, plain flour and baking powder into a bowl.
  • Mix the egg and buttermilk and then whisk into the flour.
  • Stir in the melted butter.
  • Heat a large frying pan over a medium heat and spray with oil and add 1 large tablespoon of mixture per bilini.
  • Cook the bilinis for 2 minutes on each side or until browned.
  • Serve bilinis topped with smoked salmon and sour cream, with lemon wedges on the side.
Mum used to make these and I thought it was a great recipe to dig out to make heart shaped blinis for valentines day.
