Spaghetti with Prosciutto

Ingredients

  • 400 gms spaghetti
  • 2 garlic cloves, finely sliced
  • Sea salt
  • 12 slices prosciutto, torn up
  • 60 mls white wine
  • 4 eggs, beaten
  • 50 gms parmesan, grated
  • 5 spring onions, finely sliced
  • Salt and pepper
  • 2 tsp olive oil

Method

  • Cook the pasta in a large pot until al dente (10 minutes).
  • Beat the eggs in a large bowl and add the parmesan and spring onions.
  • Heat a frying pan over a high heat and add the olive oil, garlic and a pinch of salt and cook for about 1 minute.
  • Add the prosciutto and cook for a further minute.
  • Add the wine and cook for a further minute.
  • Drain the pasta and immediately add it to the egg mixture, along with prosciutto and garlic.
  • Season with salt and pepper and mix well.
  • Serve in large bowls with extra parmesan.
I don't often cook pasta and this is a recipe that I have adapted from various different sources and is always on the request list from my hubby who loves pasta.
