Spaghetti with Prosciutto
Ingredients
- 400 gms spaghetti
- 2 garlic cloves, finely sliced
- Sea salt
- 12 slices prosciutto, torn up
- 60 mls white wine
- 4 eggs, beaten
- 50 gms parmesan, grated
- 5 spring onions, finely sliced
- Salt and pepper
- 2 tsp olive oil
Method
- Cook the pasta in a large pot until al dente (10 minutes).
- Beat the eggs in a large bowl and add the parmesan and spring onions.
- Heat a frying pan over a high heat and add the olive oil, garlic and a pinch of salt and cook for about 1 minute.
- Add the prosciutto and cook for a further minute.
- Add the wine and cook for a further minute.
- Drain the pasta and immediately add it to the egg mixture, along with prosciutto and garlic.
- Season with salt and pepper and mix well.
- Serve in large bowls with extra parmesan.
I don't often cook pasta and this is a recipe that I have adapted from various different sources and is always on the request list from my hubby who loves pasta.
