Sugar-Free Chocolate Coconut and Berry Treat

Ingredients

  • ⅓ cup organic coconut oil
  • ⅓ cup unsalted butter
  • 2 tbls raw cocao or cocoa
  • 1 tbls rice malt sugar
  • ⅓ cup shredded or flaked coconut
  • ⅓ cup raspberries or mixed berries (fresh are best)

Method

  • Melt the butter and coconut oil in a not stick pot.
  • Stir in the cocoa and rice syrup (don't allow to boil or burn).
  • Line a baking tray with baking paper.
  • Scatter the berries and coconut over the lined tray.
  • Pour over the coconut oil mixture covering all the berries and shredded coconut.
  • Place the tray in the freezer until solid.
  • Break with your hands into medium sized chunks.

    This is a great ‘anytime of year’ treat as you can use frozen berries if you need or even add nuts for a different texture.
