Sugar-Free Chocolate Coconut and Berry Treat
Ingredients
- ⅓ cup organic coconut oil
- ⅓ cup unsalted butter
- 2 tbls raw cocao or cocoa
- 1 tbls rice malt sugar
- ⅓ cup shredded or flaked coconut
- ⅓ cup raspberries or mixed berries (fresh are best)
Method
- Melt the butter and coconut oil in a not stick pot.
- Stir in the cocoa and rice syrup (don't allow to boil or burn).
- Line a baking tray with baking paper.
- Scatter the berries and coconut over the lined tray.
- Pour over the coconut oil mixture covering all the berries and shredded coconut.
- Place the tray in the freezer until solid.
- Break with your hands into medium sized chunks.

This is a great ‘anytime of year’ treat as you can use frozen berries if you need or even add nuts for a different texture.
