Ingredients

  • 1 orange
  • 4 whole star anise
  • 100 gms caster sugar
  • 150 mls water
  • 200 gms redcurrants
  • 400 gms strawberries, hulled
  • 180 gsm blueberries
  • Greek yogurt or whipped cream to serve

Method

  • Use a small knife to pare strips of orange zest.
  • Squeeze the juice of the orange and put it in the saucepan with the star anise, sugar and 150 mls water.
  • Heat gently until the sugar dissolves and then bring to the boil, and boil for 5 minutes until thickened and syrupy.
  • Leave to cool and then strain, discarding only the star anise.
  • Pull the redcurrants from the stalks, halve the strawberries and put into a bowl with the blueberries.
  • Pour over the syrup and allow to stand for several hours before serving with a dollop of Greek yogurt or whipped cream.
This recipe was sent to me by my mum at the beginning of the UK summer and I had to wait until now to give it a go. Since trying it out it has become a firm favourite.
