Summer Fruits Salad
Ingredients
- 1 orange
- 4 whole star anise
- 100 gms caster sugar
- 150 mls water
- 200 gms redcurrants
- 400 gms strawberries, hulled
- 180 gsm blueberries
- Greek yogurt or whipped cream to serve
Method
- Use a small knife to pare strips of orange zest.
- Squeeze the juice of the orange and put it in the saucepan with the star anise, sugar and 150 mls water.
- Heat gently until the sugar dissolves and then bring to the boil, and boil for 5 minutes until thickened and syrupy.
- Leave to cool and then strain, discarding only the star anise.
- Pull the redcurrants from the stalks, halve the strawberries and put into a bowl with the blueberries.
- Pour over the syrup and allow to stand for several hours before serving with a dollop of Greek yogurt or whipped cream.
This recipe was sent to me by my mum at the beginning of the UK summer and I had to wait until now to give it a go. Since trying it out it has become a firm favourite.
