Sweetcorn Fritters with Smoked Salmon
Ingredients
- 400 gm tin sweetcorn
- 125 gm tin creamed corn
- 1 egg
- 3 tbls flour
- Salt and pepper
- 1 tbl basil pesto plus extra for serving
- 350 gms smoked salmon
- Olive oil
- Sour cream
- Lemon wedges and parsley to serve
Method
- Drain the sweetcorn and put into a large bowl.
- Add the creamed corn, egg, flour, basil pesto and salt and pepper to the bowl and mix well.
- Heat the oil in a large non stick pan, add heaped tablespoons of the mixture and cook for 4 minutes each side.
- Serve fritters topped with smoked salmon, sour cream and basil pesto and serve with lemon wedges on the side.
I made this up when John made a bad batch of corn fritters and it has been a firm favorite ever since.
