Tuna Burgers
Ingredients
- 600 gms fresh tuna, finely diced
- 3 spring onions, finely sliced
- 4 anchovy fillets, finely chopped
- Salt and freshly ground pepper
- 1 tbl olive oil
- 100 gms halved pitted green olives
- Large handful flat leaf parsley, roughly chopped
- 1 small red onion, finely sliced
- 1 tbl lemon juice
- 1 tub houmous
- 4 small pitta breads, toasted
Method
- Place the tuna, spring onions, anchovies and salt and pepper in a bowl and mix gently.
- Shape into 4 burger patties, cover and refrigerate for 1 hour.
- Heat olive oil in a large frying pan over a high heat and cook the burgers for 3 minutes on one side and then turn and cook for a further 2 minutes on the other side, or until browned and just cooked through. Note they should be rare side and if you prefer them cooked right through add another minute or so to the cooking time.
- Meanwhile, for the salad, toss the olives, parsley, red onion and lemon juice together in a bowl and season to taste.
- Pile the olive and parsley salad onto the plates and top with the burgers.
- Serve with houmous and toasted pitta bread.
We love making sushi and often have some tuna left over so we came up with a good way of using it up and then started making these burgers instead of making sushi!
