Tuna with Sweet and Spicy Red Capsicums
Ingredients
- 2 tbls olive oil
- 1 red onion, finely sliced
- 2 red capsicums, cut into 1 cm strips
- 1 clove garlic, sliced
- 60 mls water
- 1 tomato, chopped
- 2 tsp caster sugar
- 1 tsp chilli flakes
- Salt and black pepper
- 1 tbl balsamic vinegar
- 1 tbl olive oil
- 4 tuna steaks
- Lemon wedges and parsley to serve
Method
- Heat the oil on a low/medium heat in a large saucepan and add the onion, capsicum and garlic and cook for about 5 minutes or until softened.
- Reduce the heat, cover with a lid and cook for 15 minutes.
- Add the water, tomato, sugar, chilli flakes, salt and pepper to the pan, increase the heat to medium and cook for a further 15 minutes.
- Remove from the heat and stir through the balsamic vinegar.
- Heat a frying pan over a high heat and add the extra olive oil and cook the tuna for 1 minute on each side, or until cooked to your liking.
- Serve with capsicum and lemon wedges and garnish with parsley.
This is one of dad's dishes which he always cooks during the summer, when we can sit outside to enjoy it with a lovely glass of cold wine.
