White and Dark Chocolate Chunk Brownies
Ingredients
- 200 gms dark chocolate, roughly chopped
- 250 gms butter, chopped
- 4 eggs
- 265 gms brown sugar
- 35 gms cocoa powder, sifted
- 185 gms plain flour, sifted
- ½ tsp baking powder
- 150 gms chunks of dark chocolate
- 150 gms chunksof white chocolate
Method
- Line a 22 cm square tin with greaseproof paper, ensuring it is left to hang over the edges.
- Put the chocolate and butter into a heatproof bowl over a pan of simmering water (don't let the bowl touch the water) and stir occasionally until the mixture is smooth. Remove from the heat and set aside for 5 minutes to cool.
- Beat the eggs and sugar together until combined.
- Sift the cocoa powder, flour and baking powder into a bowl.
- Add the chocolate mixture to the eggs and sugar and stir until well combined.
- Add the sifted cocoa powder, flour and baking powder to the chocolate mixture and stir until well combined.
- Stir in the extra white and dark chocolate chunks and pour into the lined baking tin.
- Place into a preheated oven at 160ºC and cook for 40 minutes. Test with a skewer to see if crumbs cling to the skewer. If not cook for another 5 minutes.
- Leave to cool in the tin and then remove using the greaseproof paper to pull it out of the tin. Cut into small or large chunks and serve as they are or with some ice cream.
I put a call out on Facebook for a Chocolate Brownie recipe and both Janina and Bethany sent me recipes. I ended up using both recipes to create this amazing chocolate brownie which went down really well as a birthday cake!! Thanks Jania and Bethany for making Vicki's birthday even better with this sweet treat!

I was the lucky birthday recipient of this AMAZING chocolate brownie. A fantastic texture and wonderful flavours – oh who am I kidding. Just the best brownie ever!
