Yummy Fruit Slice
Ingredients
- 1 cup flour
- 1 cup rolled oats
- ½ cup caster sugar
- 1 cup sultanas
- 1 cup raisins
- 250 gms glace cherries, roughly chopped
- 125 gms butter
- 140 gms golden syrup
- 2 tbls apple juice
- 1 egg, beaten
Method
- Mix all the dry ingredients and fruit together.
- Melt the butter, golden syrup and apple juice in a pan over a low heat.
- Mix the butter, golden syrup, apple juice and egg into the dry ingredients.
- Pour into a well greased, lined 22 x 22 cm tin.
- Cook for 23 minutes and then test with a skewer (the skewer will not be clean when it comes out as the middle should be a little sticky), but it may well need another 2 minutes.
- Leave it to cool in the tin for 5 minutes and then run the knife around the edge of the tin and tip it out onto a cooling rack.
- Turn the cake over onto another cooling rack and leave to cool before cutting into 16 squares.
This recipe comes from Michelle and has my take on it. A few of us make it and none of the cakes are the same, but they are all very yummy.

Saw Fruit Slice and decided to try today, you may be aware already, butter and the amount are not listed in the ingredients , I went ahead as having cooked for years , guessed amount , also used orange juice, apple listed in ingredients, that all did not matter to me. It is what you say yummy. Just thought worth informing you as perhaps new cooks would want to follow recipe to the exact ingredients. Etc

Thanks so much for your feedback and apologies for the missing butter weight, but pleased you went ahead and gave it a go. We have fixed up the recipe so that any new cooks don’t get confused.
