Zucchini Slice
Ingredients
- 375 gms zucchini, grated
- 1 large onion, grated
- 3 rashers bacon, finely chopped
- 1 cup grated cheese
- 1 cup flour
- 2 tsp baking powder
- ½ cup grapeseed oil
- 5 eggs, beaten
- Salt and pepper
Method
- Mix all of the ingredients together in a large bowl.
- Line an 18 x 28 cm baking tin with greaseproof paper, ensuring the baking paper is hanging over the edges.
- Pour the mixture into the baking tin and place into a preheated oven at 180ºC and cook for 30-40 minutes, until golden brown on the top.
- Allow to cool for 10 minutes and remove from the tray. Cut into squares and store in an airtight container in the fridge for up to 1 week.
Ailia bought this around when my mother in law was staying and we all loved it so much, I had to bake another before she headed home.
